♥ Vegan Sushi ♥

Ingredients (for 2-3 people) ♥♥

  • 2 cups (380 gram) rice 
  • 1 cup (240 gram) pumpkin puree
  • 1 bell peper
  • 1 mango
  • 1 avocado
  • salt
  • 1-2 tbs roasted sesame seeds
  • 2 tbs nutritional yeast
  • 1/2 lemon juice or 1 tbs rice vinegar
  • Nori (I used 6 leaves)
  • Optional: soya sauce or coconut aminos

You can add whatever veggies or fruit you like in your sushi.

♥ Edible Cookie Dough Healthy VS Unhealthy ♥

For Healthy cookie dough ♥

  • 1 can of chickpeas
  • 20-25 fresh dates (I used Deglet Noor)
  • pinch of salt
  • 1/2 vanilla bean
  • 2 handful of cacao nibs
  • 2 tbs oatmeal
  • 2 tbs peanutbutter
  • 1 tbs applesauce (sugar free)

How to

Put everything, except for the cacao nibs in a blender or foodprocessor and blend until smooth. Transfer to a medium bowl and add the cacao nibs. Stir through. Transfer into a container and store in the fridge.
