♥ Broccoli Burger ♥

Ingredients ♥♥

  • 1 broccoli
  • 1 garlic clove
  • 2 medium onions
  • 1 ts turmeric
  • 1 ts thyme
  • 1 ts paprika powder
  • Salt and pepper to taste
  • ¼ ts chili flakes
  • 1 tbs coconut aminos*
  • 1 tbs tomato paste
  • 1 cup nutritional yeast*
  • 2 cups + ½ cup cooked or canned beans (155 gram) (I used black eyed peas, but you can use other beans or chickpeas as well)

How to

Cut and steam the broccoli until tender. Cut the onions and garlic in small pieces and stir fry in a non stick pan with a bit of water until done. Drain the broccoli (if there is any water left) and mash, with a masher, together with the beans in a mixing bowl, or the cooking pot where you steamed the broccoli in. Add all the other ingredients to the mashed puree and stir until well combined. Add also the fried onion and garlic and stir through. Preheat the oven on 180 °C. Make out of the paste your burgers and fry them for say 2 minutes on each side in a non stick pan. Put them on a baking tray with a baking sheet and bake them for say 20-25 minutes. Enjoy ♥

*Coconut Aminos is a sauce made from coconut juice. It’s dark, rich, salty and a bit sweet in flavour. It’s soy and gluten free therefore it’s a great replacement for those who avoid soy and gluten.

*Nutritional yeast is a deactivated yeast that contains a good source of B-complex vitamines and it has a nutty, cheesy flavour. It is often used to replace cheese.
