♥ Vegan Sushi ♥

Ingredients (for 2-3 people) ♥♥

  • 2 cups (380 gram) rice 
  • 1 cup (240 gram) pumpkin puree
  • 1 bell peper
  • 1 mango
  • 1 avocado
  • salt
  • 1-2 tbs roasted sesame seeds
  • 2 tbs nutritional yeast
  • 1/2 lemon juice or 1 tbs rice vinegar
  • Nori (I used 6 leaves)
  • Optional: soya sauce or coconut aminos

You can add whatever veggies or fruit you like in your sushi.

How to

Don’t be like me… Do not make the rice at the end of your preparations haha. First rins the rice. Cook the rice until done. I cook my rice with 1 cup rice + 2 cups water. When cooked, let cool down (if you want to go faster, place the rice on a big plate). Now you can make your own pumpkin puree or you can use store bought. I make my own. Cut your pumpkin in small pieces, put in a cooking pot and steam with some bayleaves and salt until tender. Remove bay leaves, rins and mash with a fork. Cut all the other veggies and fruit in long sushi size pieces. Put your rice in a mixing bowl, or back in the cooking pot. Add the nutritional yeast, sesame seeds (If you don’t have roasted once, roaster them in a pan without any fat), salt to taste and the lemon/vinegar. Stir everything through. Now assemble the sushi 😉 If yo have a sushi mat, use it. If not, don’t use it… Take a leave of nori, cover 3/4 of the leave with rice. Put in the middle of the rice blanket the veggies of desire and roll the sushi tight. At the end of the nori leave, put some water to seal the sushi properly. Continue until the rice is finished. Take a very sharp knife and cut the sushi rolls in small pieces. Dip your sushi in some soya sauce and enjoy! ♥
